The most traditional short pasta, known from grandma’s family recipes. Wheat-seed shaped and a little thicker than medium orzo, it stews beautifully and binds perfectly in giouvetsi or ragù. Just as good in modern dishes: shrimp orzo risotto, orzo with caramelized onions and kefalotyri, or pumpkin cream and feta.
